Arroz de Frango no Forno



Marinate chicken (overnight) with: red wine, minced or sliced garlic cloves, olive oil , salt, bay leave, pepper, paprika, dried oregano, and the same amount of wine of tomato pulp.Fry a big chopped onion with some olive oil Add marinated chicken pieces to the onion Pour marinate liquid + some water to the chicken and let it cook for 20 minutes (medium heat)
Add rice and let it boil for a couple of minutes (high heat), stirring constantly.
At this point rice should be 30% cooked. Then, transfer everything to a baking dish and bake (200 degrees C) until all the sauce/liquid is absorbed and rice is completely cooked.
