FOCACCIA




INGREDIENTS

Dough
3 cups bread flour
1 cup warm milk (baby bath water temperature)
2 Tbsp olive oil (I use extra virgin)
1 tsp salt
1 (11g) package active dry yeast
2 Tbsp sugar

Topping
some olive oil
1 Tbsp coarse sea salt
1 tsp each: dry basil, oregano, dry parsley


METHODS


1- Mix flour and salt together; Dissolve sugar and yeast in warm milk, then add into flour mixture along with olive oil.
2- Stir mixture with a fork or wooden spoon until dough gets pu
ll together

There's a link below (keep reading/scrolling down), just click to see how to KNEAD properly. 4- Place the dough in the bowl, covered with clean film and let it rise in a warm place for about 1 hour (or until doubled in volume).
5- Roll or just press the dough with your hands into a lightly greased rectangular baking tin, or you can use your oven's baking tray... I lined my baking tin with parchment paper (牛油紙) instead of greasing it.
6- Cover with clean film (optional), and let it rest for 20 minutes. You can re-use the same piece of clean film you used in (4)...Like I did.

7 and 8- Now, for topping, I lightly oiled dough surface and sprinkled sea salt and the dry herbs on top. You can put whatever you want to, from sun dried tomatoes to whole olives...
10-Bake focaccia in a preheated oven (170 degrees C) for 20 to 30 minutes, depending on desired crispness.


You can cut your focaccia into squares like I did, and store a half batch of it in the freezer, then whenever you want some focaccia, just defrost and reheat them.

PIZZA BREAD

- The ingredients are the same as for Focaccia, just use 1 cup of warm water instead of milk. And after method (4), roll flat the dough in a floured surface to the desired shape (round or rectangular). This is how I normally make pizza crust. You can google different recipes for the same thing... Just try them out!

Woh, this looks like foccacia made in a bakery! Congratulations! When can I try one of theses pieces?... can be frozen one, i don't mind... I'll defrost it for my breakfast... I'm already hungry just looking at these photos... Anyway, congratulations... i think when I retire I'll join you to work in a bakery or home-made restaurants or so on... ahhahahha!!! Ceci
